The Candida Diet OR You Can’t Eat Anything

If you have suffered from one of the most insidious things- Candida- then you probably are well acquainted with the highly restrictive diet. Curing a candida overgrowth is a challenge since our bodies are supposed to have candida, its when it begins to grow out of control when the problems start…and never end. Here’s an article I wrote all about candida.

The candida can get into mucus membranes and cause inflammation. There’s a histamine-oxalate-candida connection that I don’t completely understand but from what I have seen on various message boards from those who have candida, they also suffer from a histamine intolerance and an inability to consume high oxalate foods. Basically, if you have candida, the battle will probably be a long one. When I was diagnosed with candida two years ago, I had read that it took people up to one year to eradicate completely. ONE YEAR. Are you kidding? No, I’m not.  I started strong avoiding everything I was supposed to including fruit which I love and snacks like pop corn and PopChips.

When I went on vacation, I was feeling better and looked forward to eating delicious gluten free toast which by now feels like a decadent treat, along with glasses of Pinot Grigio and fruit. Naturally I came home with the candida rearing its ugly head once again.

The diet is so restrictive and to be brutally honest, I now have a lot of anxiety towards food especially eating out. I have to run down the things I am “allowed” and “not allowed” to eat, consider the oxalates in the foods, think about sugar content, make sure its gluten-free, does it contain too much fiber or starch…one of the reasons I wrote my Low-Oxalate Anti-Inflammatory Cookbook is because of my own problems finding foods I can eat. I figure there must be a few other people like me.

Back to the Candida Diet.

3 Steps to rid Candida: 1. Liquid veg broth cleanse 1-2 days; 2. Eat steamed vegs 3-5 days; Quinoa/ Amaranth 1x daily; vegs that nourish the spleen, such as sweet potatoes, yams, peas, mung beans, lentils, kidney beans, adzuki beans, carrots, beets, corn, butternut squash, spaghetti squash, acorn squash, zucchini, yellow squash, rutabaga and pumpkin. These should be the main sources of carbs that satisfy your cravings for sweets as well.

 

You don’t want to feed the candida so you must avoid:

ALL SUGAR

Not just white sugar in things like cookies, cakes, candy but the natural sugar in fruit and honey etc.  And this means absolutely no wine or alcoholic beverages.

NO POTATOES OR STARCHY FOOD

No sweet potatoes (high oxalate), no white potatoes, nothing that is starchy ie. delicious.

NO GLUTEN

I’m already off gluten but for someone trying to follow the anti-candida diet, it could be hard.

NO DAIRY

Its not like I’d ever willingly drink  milk!  I use coconut milk which contains a little sugar.

VERY LOW CARB

I was told to stay well  under 25 grams of carbs a day. Consider that a single bowl of cereal, even the gluten free, low sugar kind is about 27 grams.

In addition to having a candida overgrowth, I have Adrenal Fatigue and my energy level is much higher when I eat things like bread and cereal.

I bake a lot with coconut flour and was told that the high fiber content was feeding the candida so I stopped making my coconut flour muffins and am eating a single fried or scrambled egg every single morning.

Like I mentioned above, the diet is so hard (for me at least) that I go through periods of time where I don’t want to eat. I don’t want to go out to eat because I cannot get the things I enjoy such as a hamburger on a gluten free bun, a glass of cold Sauvignon Blanc, a delicious bowl of Pho, gluten free pizza, and so many others. I walk around hungry all the time because the foods I primarily eat are chicken and romaine lettuce.

Ive read that a huge population has a candida overgrowth and do not even know it. A diet rich in processed foods, soda, fast food, starchy foods and a lifestyle heavy in stress is likely to blame for many people.

I just read an article by a women who cured her candida but not doing anything. She tossed her candida supplements out and ate whatever she wanted and didn’t think about candida. When she went to the doctor and was tested, there was no trace of candida! This proves a mind-body connection, I haven’t mastered that yet.
